This simple recipe is started on the stovetop and finished in the microwave, creating a delicious cheese for salads and other dishes.

Our family is crazy for what we call ‘squeaky cheese’, but to normal folk it is known as haloumi. That squeak against my teeth is synonymous with more backyard barbecues than I care to think about. We eat so much haloumi I end up buying a block every week. We use it on the barbecue with steak or chicken, or cut up into cubes, fried, and added to salad for a pop of flavour and a different texture. We also grill slabs of it and add it to burgers and sliders. Haloumi is great as the hero of a vegie burger. Recently I decided that it might be more economical and fun to try making it myself as I had never tried cheesemaking before and this didn’t seem to require a lot of effort, expense or time, particularly with the use of a microwave. Yes, you heard me, a microwave!
